A self-taught cook, William Brown’s culinary journey has always been a little unorthodox. Chef Billy began his culinary career in 2010 while running a successful valet company for some of the top restaurants in Dallas, Houston and Austin. After patronizing many of these establishments himself, he quickly realized his true passion was to make people happy cooking food for popular restaurants rather than parking cars for them.
Equipped with a goal and a go-getter attitude, Chef Billy found himself quickly rising through the ranks at a few of Austin’s acclaimed restaurants. Here he learned to harness his creativity to create simple yet complex dishes, inspired by varying types of cuisine, aligned with the changing of the seasons.
In 2020, Chef Billy moved on to open his own establishment, Cowboy Cantina. Billy’s food truck in the heart of Texas Hill Country (Albert, TX) serves elevated comfort food to both locals and visitors alike.
Chef Billy now sets his ever-expanding sights on La Vie. In the tasting room, Billy will create innovative cuisine that pairs perfectly with La Vie wines to deliver a whimsical and delicious experience for our guests.
